New Cheese Alert

Doriana is a unique original cheese created exclusively by Door Artisan Cheese Company Cheesemakers. While its roots are similar to an Aged Gouda, it also lends a flavor to some of the great aged Italian cheeses like Asiago & Italian Fontina.  This cheese must be cave-aged for a minimum of 18 months to achieve its unique flavor and body. It has hints of Tyrosine Crystals which are indicators of a fine aged cheese, and leaves a sweet nutty flavor with a clean aftertaste. Pair this cheese with a Chianti or a slightly dry Pinot Noir. Uplands Rush Creek Reserve

Produced only in the fall, as the diet of their cows begins to change from summer pasture to dry hay. This makes the milk perfect for Rush Creek, so soft and decadent that people call it “savory custard.”  Each cheese is wrapped in spruce bark, giving shape to the cheese and a subtle woodsy flavor.
